3 BOOZY SUMMER POPSICLE RECIPES

When we think of popsicles, we can’t help but flash back to our childhood of playing in the beaming sun and being handed an icy treat to keep us cool (thanks, mom). We’re here to tell you that those memories don’t have to stay in the past. Relive those years by making your own adult version of these icy treats. Here are 3 boozy popsicle recipes for the 21+ crew, to keep you cool all summer long:

The RefresherWhite Currant & Cucumber Gin Pops

– Large popsicle molds
– 1½ cups of fresh white currants
– ½ cup sugar
– Juice of half a lemon
– 1 cup gin
– 2 cups water
– 1 peeled & sliced lemon
– 1 sliced cucumber

Step 1: Simmer the white currants and sugar with 1/2 cup water for 8-10 minutes, then leave to cool
Step 2: Strain and push pulp through a mesh strainer to remove the seeds
Step 3: Mix in the lemon juice, gin and water
Step 4: Pour the mixture into the popsicle molds and carefully add cucumber and lemon slices
Step 5: Let it freeze for 5 hours and enjoy

Just a Kick
Tequila-Spiked Mango Popsicles with Chili Powder

– Mid-sized popsicle molds
– 3 cups chopped mango
– 3 oz. lime juice
– 3 oz. agave
– 3 oz. water
– pinch of salt
– 3 1/2 oz. tequila
– chili powder for garnish

Step 1: Chop the mango up into little pieces and add to blender
Step 2: Add tequila, lime juice, agave and water
Step 3: Puree the mixture until it’s smooth, and pour it into the mold
Step 4: Place in the freezer for an hour, when you take them out, dip in lukewarm water
Step 5: Dip the popsicles in the chili powder mix, and serve

Fruity Delight
White Sangria Popsicles

– 3 oz. paper cups
– 1 bottle dry white wine
– 1/2 cup simple syrup
– 1/2 cup orange liqueur
– 2 lemons
– 2 cups chopped fruit (strawberries, green apples, peaches, and blackberries)

Step 1: Juice one lemon, and combine wine, simple syrup, and orange liqueur in a large pitcher
Step 2: Add remaining fruit and slices of lemon to the pitcher
Step 3: Pour mixture into cups, freeze for 2 hours (insert stick mid-way through freezing process)
Step 4: Let the mixture freeze for another 2 hours
Step 5: To serve, carefully peel the paper cup off and enjoy
